We are really sorry for inconvenience caused. To solve this issue can you please try to change your Sender Name to JotForm, and your Sender-Email to email@example.com and then do a test?
Also,can youwhitelist Jotform mail sever's Ips shown in the link below;

I have changed the Sender-Email to firstname.lastname@example.org as you suggested and done a test. However having the actual sender email address is one of our requirements because we plan to feed, via email, these forms into a ticketing system that can send auto-reply to the sender confirming receipt and also populate the ticket with name and email address. Would it be possible to fix this?

You can setup the Reply to field to the email address of your customer (email field on the form), this way whenever your recieve a notification , you will be able to reply to the real email address
