    1.  Can a kind of 'secure payment' logo be displayed to put prospective client at ease if they don't know stripe? I can't see how to add this to the payment segment of the form.

    2. Can you tell me if the email I organised will be sent after the thank you page or before, or can I change the order if not?

    3. Can you tell me how to change the backgroud for the added email, which seems to be pale blue right now to white?

    For the question #1: 

    You can add a "secure payment" logo to your form by adding an Image field. In the Archive tab, you can select the logo and use it. Here's a screen animation guide:
