Can customers save or edit our forms they fill out, before submitting?

We want to use jotform for our application forms, so that we can have them submit their answers and all the documents and images required, all in one place. But we don't want them to get to the end of the application and realize they need to spend some more time gathering the pieces they need to include, and then loose all they had filled in thus far...

Yes, that is possible with our forms, the feature is called Continue later and you can find more about it here: https://www.jotform.com/help/97-How-to-Save-Forms-and-Continue-Later

Your users can fill the form, close it and come back later to finish filling of it and then submit.
