The button has been removed from the email wizard, but you could still set the email notifications to be plain text only by deleting all the content and manually entering the text, without any format, you could include each field value by using its name, this guide will help you getting the field's name: https://www.jotform.com/help/146-How-to-Find-Field-IDs-and-Names
Could this be why i am not receiving the email notifications when I am testing it out?
You should receive the emails no matter if you're using a simply text email or not, I would suggest you to check if your email address is in our bounce list, this guide will help you doing it: https://www.jotform.com/help/262-How-to-Remove-Your-Email-Address-from-Bounce-List
Also, do note that if you're using the test email button on your email wizard, you will receive the email on the address set up under your account, you will need to submit your form in order to receive it on the correct address.
