Can I set a date field to display a fixed date (using CSS) rather than the default date (Today)?

You could prepopulate date field here and then swap to limits tab and disable all other dates except your date.( If that's what you're looking for)
This could somewhat be a sloppy solution but I could try helping you out with CSS as well if this won't be enough for you.

I believe that you are referring to the date field in the Configurable list widget. The solution provided by Saccarab works with the date field when directly added to the form. Unfortunately, it is not possible to display a custom date for the date field in the Configurable list widget.
Let me send a feature request to our backend team to see if it can be implemented. I cannot provide any ETA at this moment for the implementation. However, if there is any update in this regard, you'll be posted here on this thread.

I use Configurable List widget quite a bit in my forms (I like its versatility).
I was hoping that the date field in Configurable List could be entered with a pre determined date, rather than the default (today), whilst still retaining the option for form users to amend the date (where required).
No problem though. I can use "static" option to fix the date for this purpose.
