I responded directly to an enquiry from the jotform submission. How can I get access to that email that I sent?

If what you mean is that you have received a notification and responded to it on your email, you can view the email that you have sent on your Sent items on your email account.
However, I may be misunderstanding your inquiry so if possible, can you please provide us more details regarding your question, such as the form and submission involved?

When I’m in the “submissions” on JotForm, there’s an option at the top of my screen to reply or forward (see screen shot below), when I select reply, the from address is one of our email addresses, but when I go to the “sent items” of that particular email address the correspondence I’ve sent does not display there. Is there somewhere in the Jotform platform where replies might be stored?

You should be able to view the email activity history whether from form submissions or from email forwarding/replying on the submissions page by accessing the activity history page. Please check this guide for information how: https://www.jotform.com/help/293-How-to-View-All-Your-Form-Email-History
Please note however that there are no means to search in detail the emails that were sent, nor can they be sorted according to content.
