Do forms 'time out' if people are too slow filling them in, or get called away before completing?

There is no time limit for the form to be filled out unless it was set up. Using the Countdown widget on the form, if the time runs out, the form can no longer be submitted. However, I'm afraid that getting called away before completing, is not possible. The form will only send email notifications after submitting it completely.
