I have a checkbox question that asks the user to select one or more events. As the date of an event passes, can I delete that option or will that cause subsequent responses to fall into the incorrect column on my Excel spreadsheet? My fear is that if I delete event #1, then the next user selecting event #2 will have his selection appearin the column for event #1, and selecting event #3 will result in that event being indicated in column #2.

As long as the form fields and order remain the same, the structure of the table in your spreadsheet will remain the same. Deleting options from fields will remove the data associated with those options but will not change the table structure unless the whole field is deleted.
If you need to remove an entire field, I would recommend simply setting the form field to hidden instead of deleting it.
