I have a form that allows users to upload three different files attached to their forms ( a resume, a cover letter, etc) through three different file upload buttons. I have linked the form to dropbox so that I can quickly access a person's uploaded files.
Is there a way to have Jotform automatically rename files or append something to the filename to make it easier to sort? I would like to know which file is which without having to manually open up each file.

There is no way within JotForm to automatically rename the uploaded files in the dropbox integration.
As it is now, you will have to manually open the uploaded files to view which file it is.
I do have suggestion though that you can do in the form, that maybe can help a bit also.
1. Since there are at least 3 files that will be uploaded, you can try limiting the "type" of files for each upload field. You can also place this in the "sub-label" of the upload field.
Example : Interest - pdf, Resume - docx, Essay - txt
So, when you view this uploaded files in dropbox, you will know which file it was immediately.
2. You can try adding some context or instructions within the form, informing the user to "rename" each file according to the type being uploaded.
Like... "Please add prefix or rename your files according to the uploaded file chosen. (i.e. 'my interest.pdf or my resume.pdf'.. ) "
Although you cannot strictly enforce the instruction for all, I am sure most will adhere to it simply because they "wanted to follow instructions" =)
