We have been using jotform for about 3 years now. In that time we have not had issues until recently we are finding out of the autoresponder email we have set up not being sent to the necessary parties. I am hoping someone can help provide a list of the autoresponder emails so I can provide it to my boss of the emails sent/ received (opened)/ and bounced back. We have an event coming up and it seems our numbers are way down from previous years as we are now hearing they never recieved the email notification.

You can access your email history section: https://www.jotform.com/help/293-How-to-view-all-your-form-Email-History. In the section, you just need to click the Arrow icon to view the email and its status. For example:
I believe the emails are sent to the submitters. But the email may have been filtered as spam. You are sending the email using email@example.com by default. If there's a way to advise the form users to whitelist this email, please do so and ask them to check their spam folder as well.
