I am testing out both google checkout and paypal as well but can't see to find a way to send a separate email depending on the item that is purchased because it is a digital good. Another option would be to redirect them to separate pages with a link to the digital content after purchase.

Then, use Send an e-mail after submission conditions to mark these Email Notifications / Autoresponders as conditional.
Another option would be to redirect them to separate pages with a link to the digital content after purchase.
You can use either Change Thank You URL after submission or Change Thank You message after submission conditions for this.
Note: We send Notifications/Autoresponders for complete submissions only. In other words we do not send Email Alerts for pending submissions.
Note: Please also make sure that redirection to your custom Thank You Page after successful payment is working fine. That option may relay on merchant account settings, so it is better to re-check everything.

Hello, about the above instructions... the example with the green highlighted area where it reads "email to" how will we know which email address to put? The purchaser's email address that will be receiving our digital download will be unknown to us.

You can create a conditional auto responder and in the "email to" field you should put the name of the email field of your form. Here is the sample screenshot of a conditional auto responder:
