Need a single choice which becomes unavailable after submitting it

I need to create a single choice list where once a choice is made, that choice is no longer available? This is for choosing a single date from a list of dates. Each date, once chosen, cannot be chosen by anyone else.

Can this be set up in JotForm?

Yes, this is possible with an Appointment Slots widget field. The Max Selection should be set to 1 to allow only one date selection (single choice) per submission. The date will be disabled once submitted by one of the users.
