How can I see a submission date/timestamp and an update date/timestamp?

The form is a request form, users submit the request and when the request is complete it is updated with a "Closed" status.

Do you mean to see the date/time stamp of a submission when it is edited? If so, unfortunately, it is not possible to record in the submission. However, you may find the edit submission timestamp from the notification received after editing the submission.
