My questions are:
If an attendee wants to cancell their registration how do they do that?
Is there an admin function where I can make changes, register attendees?
What kind of receipt does a person get after they have submitted their credit card payment?
How do I add option to pay by check or credit card?
Can a JotForm representative test my form and give me feedback on if it is set up correctly?

1) You simply need to contact us, and we will cancel it for you.
2) Do yo mean like editing the submissions you have received? If that is the case, yes, you can do it from the Submissions dashboard: https://www.jotform.com/help/269-How-to-View-Form -Submissions
