I've successfully integrated with google doc. However, I've learned I don't need every field on my form to go to the google doc. Is there a way to choose what fields actually get sent to the google doc?

Unfortunately, that is not possible. All fields will be passed to the Google Drive.
If you do not need all fields, you can create an Excel report and filter the fields.
You can also create a PDF report and customize it.
