Was fine yesterday, but all of a sudden all of our form fields are expecting email addresses for the formatting. We haven't changed anything in the account.

Do you mean even those fields which were not originally email fields now became email fields? I just tested your form and I was able to submit it, placing email in one email field only. Please see below.
