We currently use an old html styled online form. We are getting ready to convert all forms past and future to JotForm however, we're wondering if athe subject line can/will be customized when we get the email. Currently all "Wedding Forms" say "Wedding Announcement" in the subject line and we'd like to see the name of the wedding party along with "Wedding Announcement" to be able to keep track of them better. Is this possible with JotForm?

Yes , that is possible to achieve with Jotform
You can also change the email template by using the Text processor Toolbar that comes on the upper side of the email template. You can add an Image and different types of font sizes, font colors , etc.
You have the option, use any text processor to make your own template and then paste it into the body if you will.
