We have customers submit their requests for processing. Once we process it, we enter the tracking information of the shipment in a hidden field. Is it possible that the person who submits the request would get an email notification automatically after we enter that information?

There is an option to trigger email notifications or autoresponders with form edits. This option can be found under the "Advanced" tab while editing your email notification or autoresponder:
Set this to "Yes" and emails will be triggered with submission edits.
