On my form it is already established what date the event will take place. But there are 10 specific times that certain things are scheduled throughout the event... I don't want the person filling out the form to have to keep addressing the date on each and every line...

The simplest way to do that would be to inject CSS to hide the date portion of the date/time fields. However, preventing the date from showing up in the form's email alerts would require embedding a copy of the form's source and using a script to populate hidden boxes with just the time.
If you give the form's name, I can provide the necessary CSS to inject if you want to use the first method.
