We receive the emails to our quarantine and have no problem getting them through after - how do I get Jotform to remove the address from the 'bounce' list

May I ask what specific email address are you referring to? Upon checking, the account's email address is not on the bounce list.
In the Account Settings, you can manually check if the email address is on the bounce list or not. Please check this guide for more details: How-to-Remove-Your-Email-Address-from-Bounce-List.
