Can we add notes to the ticket submissions page, also can we mark certain tickets as open/closed. We are currently just "flagging" them if they have been completed.

JotForm only allows to flag submissions, but you cannot mark them as closed/opened. You will find the flag on the submissions grid:
If you would need to add notes or set a different flag then you could add the fields to your form and set them as hidden, then they will be displayed when you edit the submission on your JotForm account.
