I am working with a client who does not want the people filling out the form to be able to jump to the next field before filling out the current one.  Is there a way to remove the << 1 out of x >> at the bottom that allows people to "see all"?

Unforutnately, it is not possible to remove the progress at the bottom of the page currently. However, let me send this thread to our backend team to see if we can add an option to remove the progress of the form. Please note that we cannot guarantee that the feature will be implemented or cannot provide any ETA for now. If there is any news in this regard, we'll update you here.

    Thank you!

Your request has already been escalated to our development team and it is in opened status. Removing it from form stand-alone version is not possible currently due to the fact that it is the only way to overview form. On the other hand, there is a way to remove this but this is possible only for the embedded forms.

If you use  your forms by embedding to a website, you may want to consider to use Inline Embed method. Once you uncheck " Show Progress Bar" option, progress bar will be hided completely.
