When it goes to the PayPal page I can see my log in and this message..."You are logging into the account of the seller for this purchase. Please change your login information and try again."
How do I prevent this from happening when a team mate places an order?

When it directed me to the PayPal page it is showing my credentials. Will
it show my credentials when another buyer gets to that page?
Also, when going live with this form, do I need to change the Sandbox
settings to no and obviously take off the test item?
Last but not least. How will I see each order come through so I can fill?

No, it will not show your credentials, you see them in your browser because they are saved in your browsers cache. Correct, you need to turn off sandbox if you want to go live mode.
Each submission is initially considered as an incomplete payment, so, if the users makes the payment, it will be shown in the submissions dashboard: https://www.jotform.com/help/269-How-to-View-Form-Submissions, and JotForm notifications will be triggered: https://www.jotform.com/help/25-Setting-Up-Email-Notifications
If the user decides not to make the payment it will remain in your incomplete payments dashboard: https://www.jotform.com/help/135-How-to-view-incomplete-payments
