We wish to minimalism the amount of emails being sent to our patients once they have completed their form submission.
How can we stop the JotForm email detailing their submission being sent to the person who has completed the form?

If you do not want to send an email to your users once they submit the form you have to delete the Autoresponder email from your form. Inside of this guide, you can find how to do it:
If you want to send then only some of the data they filled or if you want to send them a custom message, you can customize the Autoresponder email.
