I want to create a member directory for a Joomla website.

I can create custom fields in core Joomla but require a mechanism to capture the field data. It would be great if this could be done using a JotForm

Any ideas how this might be implemented ?

    Regards

You can create a form in JotForm so that you can capture the field data if someone submits your form. Basically, field data or form responses are being stored in the Submissions. Here's how to view the submissions on your form: How to View Form Submissions. Or you can create an email notification on your form so that you will be notified via email if someone submits your form. Here's the guide on Setting Up Email Notifications.

And lastly, you can embed that form you have created in JotForm on your Joomla website. Please refer to this guide on How to Embed JotForm to Joomla 3.
