How can I track the number of users that selected a date?

Tenho um formulário com 3 datas para as pessoas seleccionarem uma.
gostaria de saber se é possível colocar o número de pessoas que já escolheram cada uma das datas.

I don't see anything that closely resembles a Date Field on that form. If you're planning to add a Date Field, it's not possible to show how many people picked/selected certain dates. The good news is, you can achieve something similar by using widgets.

All the widgets I'm listing below track user selection for each submission. This would mean that when someone picks a slot/date/item/etc it will be counted towards the submission and the widget counter will reduce by 1. Yes, it won't actually display how many people picked which date/slot, but it still allows you to display the remaining number of slots for a specific date. Feel free to check them out and pick one that will suit your needs.
