How do you increase the length of the text?

Since you are using the new Form Layout on your form, you will not be able to modify or customize the layout.
If you want to modify layout or field in the form you need to switch to Legacy layout first.
Go to form settings click "SHOW MORE OPTIONS" then, scroll down to the last part of the page. Change the "Form Layout" to "Legacy Layout"

Although changing the format to that of "legacy" worked, the form itself
does not look professional at all. The "radio" boxes are cramped together
and the "submit" button disappeared.
I am positive there must be something wrong.

You can add a submit button to your form from the form elements.
That's generally how the radio button looks on a normal form.
