I haven't been able to figure out to how to "add" my signature once a client signs and submits their contract.
Can you please explain how I would do that ? or is it even necessary to add my signature ?

You may consider adding your signature as an image in the form. You can hide this field in the form, do it in the field properties.
Create an autoresponder email and enable the PDF Attachment in it.
Lastly, make sure to check Show Headers and Texts in the submissions page settings:
