Which customer information will go to Stripe payment?

If I make a payment form that is connected to stripe does the customer information get stored and will I be able to access it? Also what information is sent to the stripe payment? Will name and email be filled on my stripe payment logs?

There is also a possibility of pushing some additional data if you need it to Stripe by using the Custom field option:
