Credit Card Authorization form

I want to accept customer order details and credit card authorization BUT not charge to any only payment provider. I will process payment manually. I do want to use the signature widgets and everything on my form. How can I make sure payment will not be processed accidently??? Can I use my form simple to collect payment authorization with all the options I entered on my form??
