I have always had 3 emails sent to different parties and now I can only enter 2. What gives?

Yes, as of this month it is no longer possible for free account users to specify more than 2 recipients per email notification.
If you would like this functionality you must upgrade to any paid plan. Plans start at $19USD
Or, as a workaround with your free account you can create multiple notifications.
