I dont want to store forms on the servers.
I would like to have the forms filled out, set to the email notifications that need to be done, then have the forms deleted with no trace left anywhere.
Can this be done?

Sorry no, this is not possible on this version of JotForm.
And form 'auto delete' feature is something that may require critical consideration to be implemented.
As is now, deleted forms are NOT stored on our server, and some users had complained already of accidentally deleting their forms on their own, and could not retrieve them back.

Btw, you can 'manually' delete the form on your own.. You can do this by going to My Forms, and just select the form you need to delete. The deleted form will still be in your My Forms / Trash Folder.. if you clear the trash folder, trace of the forms will be permanently cleared.
Please be reminded : deleting the form/s wil also delete all submissions of that form/s. If the form have notification emails, that will be the only remaining trail of the submissions data that can be traced if needed.

An auto delete feature over a secure server will allow forms to be HIPPA complient for medical offices. This is why I am asking
