How to extract certain fields from Jotform submissions

Hi There,

How do I go about extracting selected fields from submissions and putting them into a word or pdf document?  

Background:  I work for a college and students submitted answered survey questions and abstracts for their summer research.  We need only a few fields so that we may publish their abstracts.

You can download your submissions in Excel/CSV/PDF formats.
