It has changed since I last used the submission counter. I cannot find where to place the total number to count down from.
Help!

The Submissions Counter Widget fetches the number of submissions you have on your form. Since you never mentioned which form you're currently working on, I'll just assume it's one of the forms you have on your account that has 7 submissions in total.
To get it back to 0, you would need to delete ALL the current submissions for that form.
However, be mindful that this process can not be undone. Here's a snippet from the guide I'm linking below:
When deleting submissions individually, you will see this warning message (see screenshot below). Please note that deleting submission data is irreversible and will permanently remove it in our servers, including the file uploads on them.

So I strongly urge you to make a backup copy of your Submission Data first just in case you'd still need them. There are a couple of ways to do that, feel free pick one that will work for you:

As soon as you're done deleting all submissions for that form, reload your form and it should show 0 on the counter.
After doing these and you're still seeing 7 on the counter, give us the ID/URL of the form you're working on so we can have a look.

What I need help with is how to set the submission counter to begin at 7 so when someone registers, it goes to 6, etc, to 0. There used to be a place for me to put that in the widget and I don’t see it. Where can I set it so the number begins with 7 and then counts down as each person registers for that table?

1) The Submissions Counter widget should be set to the 'Remaining Submissions' counter type.
2) The form should be also configured to be disabled on a submission limit via the form settings.
The alternative method is to use other widgets, for example:
They are based on their own limits rather than on a form submission limit.
