I am looking for a template where I can list the items I have for sale. Once someone selects them and pays the item needs to automatically be removed from the listing. Those that they didn't select will remain. I'll have about a hundred items to list and with only one of each I need to ensure that only one person can select it. I do not want to have multiple people purchasing the same item when there is only the one available. Thanks

I used the Gift Registry widget - see https://www.jotform.ca/build/73018030284245
It works well for people selecting an item and then having it display as 'None' to anyone else wishing to purchase the same item.
The issue I am having with this is that I need to have it total the amounts and allow people to pay for the ice through Paypal. Is this possible with this widget? I have tried the conditional formatting but can't get it to recognize the price from the text.
Ideas?

Unfortunately, that will not be possible with Gift register widget.
To calculate the total price of several fields, you will have to use radio or checkbox button fields:
And calculate the total with Form calculation widget:
That will require that all current options in your form you replace with checkbox/radio button fields.

Will checkbox or radio button fields display a balance of 0 after purchase? I need to ensure that the items are not sold twice.

That is not possible. They will be selected each time someone uses the form, probably, the following widget may do the trick you are trying to implement:
