Is it possible to issue a receipt with a unique number or code for anyone paying up to purchase a ticket? It's a simple form but we would like for these who pay in advance to proof they paid with a receipt etc.

The receipt should come from the payment processor that you used. So that depends on which one you used.
For example, if you use PayPal, a user will be redirected to PayPal after clicking submit so the submission will not be over until the payment is finished, and then you will receive a Notification email with all information from the submission and with the payment info.
And it is similar with the payments as well, you will receive payment information in the Notifier.
