still none of the forms are coming through to my emails.

I got it the Office 365 SMTP to work on my end. You can test this form: https://www.jotform.com/70458470575968.
If it's not working to your end, then likely your credentials are incorrect. Please review that. You can find the details in your mail options section, like this:
Also, when using SMTP, try not to activate the PDF attachment and the Send Uploads as Attachment options then try to use a single email in the recipient box. See if that helps.
