How customer can change the form (unselect/ unchecked) and select different option?

    Custom can’t unchecked any of the options during editing, Also if payment decreased or increased during the change how it will work?

    You could put this all options using "Multiple Choice" field so customers can check/uncheck.

    Or add it individually using "Multiple Choice"

    It is also be better using "Multiple Choice" field for the options with calculation values.
