I am wanting to have a live count of how many people have submitted my forms on an external website. Do you guys have a widget for that or any other suggestions for how to accomplish that automatically?

You can add "Google Analytics" widget to your form then just add your google Tracking ID in the widget.
Check the links below regarding the usage of google analytics.

https://developers.google.com/analytics/resources/concepts/gaConceptsTrackingOverview#trackingCodeExecution
Or you can add "Get form page URL" widget. This will help you track where the submission came from since it will copy the form URL before submission. -

Maybe I'm misunderstanding how this will work, but this seems like it is designed to do the opposite of what I want. I don't care how many people click the link from the external site and then submit it. I just want a running total of how many I have signed up, no matter how they signed up. Does that make sense?

The closest feature we have is the Submissions Counter Widget.

This will display the total number of submissions you have for that particular form.
