Is it possible to give each customer an order number?

In order to do this,  I imagine a Box (which customers shouldnt be able to change) with an order number which always adds one to the number of the customer beforehand must somehow be added. 

That way, the order number can also be integrated in the Email with the ordering confirmation (which is nececcary).

Is it possible to do so? and if yes, how?

Yes this is possible. Check this guide: Add Custom Unique IDs to your Form Submissions. Then after that, create an Auto Responder and make sure to include the field to the message settings.
