How could I have item and quantity options together in one tab

second, we offer several beverage options

how could I have item and quantity options together in one tab if possible

current setup with multiple selection 

no quantity selection

If I understand correctly, you wanted to have the option to contain the description details about the items(beverages) in a tabulated like manner.

I think the Form Tabs widget matches what you need. You just need to use Page Break field thought to make it work since it will not work with section collapse field.

That’s not what i want

example,

for the soda section, i have coke, Diet Coke etc, what if we want more than one Coke quantity, how could we do that?

Since the calculation is being done using separate fields, you may consider adding number fields for each option that you want to add quantity.
