How can I receive an email if a recipient has not submitted the form within two hours?

I'm afraid we can't provide that functionality out of the box, however you can prevent the form submission after a limited time. Or you can add a timer to measure after submission how long your recipient took to fill the form and submit. You can optionally hide or left the timer visible for your recipients. 

In my opinion "Global Timer" seems like a good match for your needs. You can find it under Widgets Tab and you can find few more widgets by searching timer, with similar functionality.
