We own and manage many commercial office properties. Some of our forms are similar from property to property but there are slight changes from one building to the next. If a user selects a particular property from a drop-down in a survey, can we set the form up such that the fields that follow are tailored to that particular property.

From how you described it, you're hoping to show/display fields that are related/tailored to the property selected on your form. This can be achieved by using CONDITIONS. You can conditionally show/hide fields based on the user's answer. And you can also do this with multiple fields at once.
In case we misunderstood your question, just get back to us with a bit more info and a clearer description of what you're trying to do so we can better assist you.
