Why can't I get the amount from the form?

No way to fill automatically the amount of stripe payment as it used to work in the past?

The payment field cannot be conditionally updated.  If you want to pass a calculation value to your payment field, here is how to do so:

Use a calculation field to get the total to be passed to the payment field:

The "Get Price From" feature only works with a calculation field.  Add a calculation field to the form, add up your two fields, then pass that total to the payment field:

You can hide the calculation field if you don't want it to be shown in the form.

why isn't it written somewhere easy to find for users?

I understand. We are sorry for the trouble caused. The custom/user-defined payments can be read only from the calculation field as mentioned in the guide How-to-Pass-a-Calculation-to-a-Payment-Field and no text fields can be used to send the amount to the payment field. We'll check our documentation and update if there are necessary changes to be done.
