I am not sure why
I am not getting notifications when a form it submitted
Also, why person submitted is not getting a copy
I opped to use my own SMTP with my Google account -
Is there any way you can check what may be the issue? I am planning to go live tomorrow!

I tested one of your forms, but I did not receive an Autoresponder email.
I saw that you are using your own email address as the Sender Email. Most likely you did not set your SMTP credentials correctly. Please double check your SMTP credentials.
Considering that you are using Gmail, please check this guide:
You can also change the Sender Email to our default email address email@example.com and test your form again. If you previously did not receive the emails from our email address, please check your spam folder and here are emails coming form @jotform mark them as not spam.
