I can see my username under my profile info, but can't edit it.

The username can be changed upon request. So, please let us know what your desired username would be, and provide 2 more alternate usernames in case the desired one is not available.
Also note that if you had created custom URLs, they will not longer work once we change the username, so you will have to create new ones: https://www.jotform.com/help/261-How-to-Create-a-Custom-URL-of-a-Form
