Where are the details of setting this up? Suppose you want visitors to donate through PayPal, where is an example running through the steps, creating the PayPal button, etc. Must I go to PayPal and create the button there?

You can add your own donate button which you can add in your form. I would suggest you to please take a look at the following guide on how to customize submit button in form: https://www.jotform.com/help/118-How-to-Customize-the-Submit-Button-with-CSS

Please accept my apology for the incomplete answer I provided earlier.
If I understand your requirement correctly, you want your website users to be able to donate through PayPal. Is that correct?
Here are the steps you need to follow to achieve your requirement:
#1. Create a form and add the desired form fields like Name, email and contact number.
#2. Add PayPal payment tool in form and customize it to accept donation. Please check the screenshot below:
Once form is submitted, user will be redirected to Paypal checkout page where user can settle the payment.
#3. Grab your form's desired embed code to add it in your website. You may like to take a look at the following guide which should help you how to embed form in your webpage: https://www.jotform.com/help/34-Adding-a-Form-to-a-Web-Page

I noticed on the PayPal Integration form, top line, you entered your email address at Jotform.com. Instead, can I name an email address at our website, namely email@example.com ? That's where we would like it to go. I will try this this evening.

When my donation form (https://form.jotform.com/73407243597159) in my form "Testing Donate #1" goes to PayPal I get this error message:
The seller accepts encrypted website payments only. You cannot pay the seller through unencrypted buttons. Please contact your seller for more details.
What is wrong here?

Please try turning off the "PayPal Encrypted Website Payments Feature" by following the steps below.To Turn Off the PayPal Encrypted Website Payments Feature Log in to your PayPal account. Click Profile. From the Selling Preferences column, click Website Payment Preferences. In the Encrypted Website Payments section, select Off. Click Save.

I (and my colleague) have been working on this for two weeks and getting nowhere, but now we're in business, finally. The toggle switch on PayPal was really hard to find and I sent them a message to fix that.
I set the PP account up in 2002, made some (encrypted) buttons which we've used ever since, but never did anything new after that.
Both of you deserve promotions! Tell your bosses!
