I would like to have a multiple choice field with the added option of "Select All" which, if selected, to check all other options.
Is there a way to do that (click "Select All" triggers selection of all options)?

Please note that it is currently not possible to add select all feature in "Multiple Choice" question. I would suggest you to please add "Select All" widget in your form which will allow you to select all checkboxes of the widget.
The following guide should help you how to add widget in form: https://www.jotform.com/help/252-How-to-Add-a-Widget-to-Your-Form
Hope this helps.

Thanks, Ashwin. I tried that one but, then, i lose the ability to have an "other" option with text field attached. (or, it's not apparent while using the widget...)

Unfortunately, that widget does not have the "Other" option. I have forwarded a request to our widgets team, in order to have this "Other" option included. Unfortunately, there is no estimated time-frame for an implementation. You will be notified via this thread if there is any progress on this request.
