The only online proof I can provide would be our Privacy Policy. Your concern was specifically mentioned on item #2 of our Privacy Policy page:

    2. Submission Data. We respect the privacy of our users and the privacy of their client data. All user information contained within the forms you may use or build on the JotForm Site are governed by our Terms of Service. You retain all rights to your data. We will not sell, share data. We will not access your data for non-administrative reasons.

To put you at ease, no one in our team knows about all the submissions happening in our servers. No one peeks at anyone's data even, unless, it is necessary to do so. As an example, we would only have to look at USER A's submission data if and only if it is needed in troubleshooting a problem/issue that was reported by USER A.

If you want an ultimate security feature that would allow only you to view your submission data, you can use FORM ENCRYPTION. This would mean that once you enable encryption, only you would be able to decrypt it using the UNIQUE PRIVATE KEY that will be generated the moment you enable it. Even us can't view your data unless you proactively share your private key with us.

Be cautious however since many users tend to use this feature without preparation and lose data in the process because of using an incorrect private key. So before you proceed, please have a look at our detailed guide with FAQs to get a general idea on how this feature works.
