My place of business uses a jotform for a lead submission tool and we need one of our forms notifications to be plain text devoid of any html tags automatically added.

It is not currently possible to have fully plain text emails. All but a few <p> tags can be removed but the emails will still retain a small amount of HTML formatting. Our guide on the topic has been updated:

That thread was in regards to something our developers did specifically for that one user. It is not a feature that we offer, nor is it something our developers can put consistent resources in to updating on a per case basis. It actually took a few months for that request to be fulfilled. I marked that thread as private to avoid confusion for any other users.
